I am not going to claim to know anything about making gel candles but having a little bit of a background in the sciences I may be able to dispel some of the mystery.
Polar molecules are molecules that have a charge (negative or positive) at any point of their anatomy like water. Non-polar molecules are the opposite and they tend to be that of a neutral charge like oil. These molecules will interact with themselves but not really with each other. Think of it like mixing oil and water, it will never happen.
